Apple and Passion Fruit Crumble

Serves: 4
4 passion fruit
4 green apples
55g / 2 oz caster sugar, plus 80g / 2 3/4 oz
60g / 2 1/4 oz shredded coconut
90g / 3 1/4 oz plain flour
50g / 1 1/3 oz low-fat spread, softened

Preheat the oven to 180ºC / 350ºF / Gas 4 and grease a 1 litre /35 fl oz oven proof dish.

Sieve the passion fruit, discarding the pulp, and place the juice in a bowl. Peel, core and thinly slice the apples and add to the passion fruit juice, along with the 55g / 2 oz of sugar. Mix well, then transfer the mixture to the prepared dish.

Combine the shredded coconut, flour, extra sugar and butter in a bowl and rub together until the mixture has a crumble texture. Pile on top of the apple mixture.

Bake the crumble for 20-25 minutes, or until the topping is crisp and golden.
