Baby New Potatoes with Fresh Herb Vinaigrette

Serves: 10
 Ingredients:
1 kg of Baby Potatoes with the skin
1 Large Red Onion, chopped
4 Garlic Cloves, chopped
4 Tbsp of Flat Leaf Parsley, chopped
1 Red Chilli Pepper, seeds removed and chopped
100 ml of Red Wine Vinegar
300 ml of Extra Virgin Olive Oil
 Method:

In a big saucepan Boil the Baby New Potatoes with a salted water (cover the potatoes with water), till tender, about 15-20 minutes, drain and reserve to chill.

To the Vinaigrette sauce: In a bowl mix the olive oil, vinegar, onions, garlic, chilli pepper and the parsley, you can add salt and fresh black ground pepper to taste.

When the potatoes are chilled, in a big container put a the potatoes and put all the vinaigrette sauce over the potatoes and close the container and leave closed at least for one day.

The taste it is amazing and this recipe is simple and very easy to do it.
