Preheat the oven to 325ºF / 160ºC / Gas Mark 3. Wrap the tortillas in foil and heat in the oven
for 5-8 minutes until warmed through.
Meanwhile, broil (grill) the bacon and drain on paper towels. Place the scallions (spring
onions) in a bowl and add the mayonnaise. Season with salt and pepper and mix together.
Place salad greens (leaves) onto each tortilla and top with 2 bacon slices (rashers), the
tomatoes, and the mayonnaise. Carefully roll up, cut into 3 pieces, and serve.
