Bacon Salad Wraps

Serves: 4
Ingredients:
4 wheat or corn tortillas
8 lean bacon slices (rashers)
2 scallions (spring onions), finely chopped
4 tbsp mayonnaise
salad greens (leaves)
2 tomatoes, sliced
salt and pepper
Method:

Preheat the oven to 325ºF / 160ºC / Gas Mark 3. Wrap the tortillas in foil and heat in the oven for 5-8 minutes until warmed through.

Meanwhile, broil (grill) the bacon and drain on paper towels. Place the scallions (spring onions) in a bowl and add the mayonnaise. Season with salt and pepper and mix together.

Place salad greens (leaves) onto each tortilla and top with 2 bacon slices (rashers), the tomatoes, and the mayonnaise. Carefully roll up, cut into 3 pieces, and serve.
