Preheat the oven to 180ºC / 350ºF / Gas Mark 4. Heat the oil in a saucepan and cook the leek for
5-6 minutes until soft.
Place the leek in the bottom of a ramekin and top with the ham. Crack and pour in the egg, then
top with the cheese and tomato.
Bake in the preheated oven for 10 minutes until the egg is set. Remove the ramekin from the
oven, leave to cool a little, wrap in a cloth and
serve.
