Beef Fajitas

Serves: 4

3 cloves garlic, crushed
1/4cup lemon juice
2 teaspoons ground cumin
1 tablespoon olive oil
600g beef strips
1 large red pepper, sliced thickly
1 large green pepper, sliced thickly
1 medium yellow pepper, sliced thickly
1 large red onion, sliced thickly
8 large flour tortillas

for the salsa cruda:
2 medium tomatoes, deseeded, chopped finely
1 fresh long red chilli, chopped finely
1/2 cup coarsely chopped fresh coriander
1 clove garlic, crushed
1 small white onion, chopped finely
2 tablespoons lime juice


Combine garlic, juice, cumin and oil in large bowl; add beef, stir to coat in mixture. Cover; refrigerate until required.

Make salsa cruda - (combine the ingredients of the salsa cruda in a small bowl)

Cook beef, in batches, in heated oiled large frying pan, stirring, until browned all over and cooked as desired. Cover to keep warm. Cook peppers and onion, in batches, in same pan, stirring, until softened.

Meanwhile, heat tortillas according to instructions.

Return beef and pepper mixture to pan; stir gently over medium heat until hot. Divide fajita mixture among serving plates; serve with tortillas and salsa cruda and, if desired, guacamole.
