Fry off garlic and spring onions for about 2 mins, add chopped
mushrooms and pepper, one tbsp of balsamic vinegar and heat for 2 mins.
Add chopped tomatoes, leek, ketchup and after 2 mins add the spinach and let it reduce down.
Add butter and Salt and pepper to taste and let is stew for about 3-4 min.
Finish with a few shavings of parmesan (optional) and serve.
