Serves: 4
Balsamic vinegar
1 tin of chopped tomatoes
2 garlic cloves
1 bunch of spring onions
1 punnet of mushrooms
1 red pepper
1 large bag of spinach
1 teaspoon of butter
5 tbsp of tomato ketchup
1 leek
Salt and pepper
Parmesan cheese (optional)

Fry off garlic and spring onions for about 2 mins, add chopped mushrooms and pepper, one tbsp of balsamic vinegar and heat for 2 mins.

Add chopped tomatoes, leek, ketchup and after 2 mins add the spinach and let it reduce down.

Add butter and Salt and pepper to taste and let is stew for about 3-4 min.

Finish with a few shavings of parmesan (optional) and serve.
