Burgos with Sherry Vinegar

Serves: 4
400g / 14oz Burgos cheese
1-2 tbsp clear honey
3 tbsp sherry vinegar
carrot sticks
chilled sherry, to serve

Place the cheese in a bowl and beat until smooth, then beat in 1 tablespoon of the honey and 1 1/2 tablespoons of the vinegar.

Taste and adjust the sweetness to taste by adding more honey or more vinegar as required.

Divide between 4 small serving bowls, then cover and chill until required. Serve with carrot sticks and chilled sherry.
