Carrot Cake
Carrot Cake -

Makes: 1 Cake

3 carrots grated
3 eggs
1 cup of vegetable oil
3 cups of self-raising flour
2 cups of caster sugar

For the topping
1 tbsp margerine
1/2 cup of milk
5 tbsp of cocoa powder
4 tbsp of caster sugar


Preheat the oven 220ÂșC.

Add the grated carrots, eggs, vegetable oil and sugar into liquidizer and add slowly the self-raising flour and mix well.

In cake tin bake in the oven for about 45 minutes or till golden on top, check with a long skewer if the cake is baked properly. If so, leave to cool down a little bit.

To make the chocolate top, just add all ingredients into a sauce pan and heat slowly, stirring well till have a thick and smooth consistency.

Remove the cake from the tin and spread the topping over the cake.
