Chicken Roule

Serves: 4
4 boneless chicken breasts, about 115g / 40z each
115g /4oz / 1 cup minced beef
30ml / 2 tbsp chopped fresh chives
225g / 8oz Boursin or garlic cream cheese
30ml / 2 tbsp clear honey
salt and black pepper

Preheat the oven to 190°C / 375°F / Gas 5.

Place the chicken breasts, side by side, between two pieces of clear film. Beat with a meat mallet until 1cm / 1in thick and joined together.

Place the minced beef in a large pan. Fry for 3 minutes, add the fresh chives and seasoning. Cool.

Place the chicken on a board and spread with the cream cheese. Top with the mince mixture, spreading it over evenly.

Roll up the chicken tightly to form a sausage shape.

Brush with honey and place in a roasting tin. Cook for 1 hour in the preheated oven. Remove from the tin and slice thinly. Serve with freshly cooked vegetables.
