Chicken Tostadas

Serves: 4
4 large flour tortillas
1/2 cup canned refried beans
1/2 cup bottled tomato salsa
3 cups coarsely chopped cooked chicken
1 1/2 cups coarsely grated cheddar
4 cups finely shredded iceberg lettuce
2 medium tomatoes, chopped coarsely
3 spring onions, sliced thinly
1/2 cup (120g) soured cream

Preheat grill. Place tortillas, in single layer, on baking trays.

Combine beans and salsa in small bowl. Divide bean mixture among tortillas; top with chicken and cheese. Place under preheated grill until cheese melts and tortillas' edges crisp.

Serve tostadas topped with lettuce, chopped tomato, onion and soured cream.
