Chicken and Curry Mayo Sandwich

Serves: 2

4 slices Granary bread
25g / 1oz / 2 tbsp softened butter
115g / 4oz cooked chicken, sliced
45ml / 3 tbsp Curry Mayonnaise
1 bunch watercress, trimmed

For the Curry Mayonnaise
Makes about 150ml / 5fl oz / 2/3 cup

120ml / 4fl oz / 1/2 cup mayonnaise
10ml / 2 tsp concentrated curry sauce
2.5ml / 1/2 tsp lemon juice
10ml / 2 tsp sieved apricot jam


Mix all the ingredients together thoroughly and chill until needed.

Put all together:

Spread the bread with butter and arrange the chicken over two of the slices.

Spread the Curry Mayonnaise over the chicken slices.

Arrange a few sprigs of watercress on top, cover with the remaining bread, press lightly together and cut in half.
