Chilli Con Queso

Makes: 2 Cups
2 teaspoons vegetable oil
1/2 small green pepper, chopped finely
1/2 small brown onion, chopped finely
1 tablespoon pickled jalapeno chillies, chopped finely
1 clove garlic, crushed
1/2 x 400g can undrained chopped tomatoes
250g cream cheese, softened

Heat oil in medium saucepan; cook pepper, onion, chilli and garlic, stirring, until onion softens. Add tomato; cook, stirring, 2 minutes.

Add cheese; whisk until cheese melts and dip is smooth.

Serve hot with corn chips, if desired.
