Crab and Prawn with Corn Cakes

Serves: 4
3 medium potatoes, chopped coarsely
300g can corn kernels, drained
200g cooked medium prawns, chopped coarsely
170g can crab meat, drained
1/3cup finely chopped fresh coriander leaves
1 egg, beaten lightly
1 tablespoon sweet chilli sauce
1/2small red onion, chopped finely
40g butter, melted

Boil, steam or microwave potatoes until soft; drain. Mash potatoes until smooth; cool.

Preheat oven to hot 220ºC / 200ºC (fan-assisted) Combine mashed potato, corn, prawns, crab, coriander, egg, sauce and onion in medium bowl.

Shape 1/3cup of mixture into patties; place on baking tray lined with baking parchment; brush with butter. Bake 15 minutes; turn carefully, bake a further 15 minutes or until browned lightly. Serve patties with extra sweet chilli sauce, if desired.
