Eggs and Cheese

Serves: 6
6 hard-boiled eggs, cooled and shelled
3 tbsp grated Manchego or Cheddar cheese
1-2 tbsp mayonnaise
2 tbsp snipped fresh chives
1 fresh red chilli, deseeded and finely chopped
salt and pepper lettuce leaves, to serve

Cut the eggs in half lengthways and, using a teaspoon, carefully scoop out the yolks into a fine sieve, reserving the egg white halves. Rub the yolks through the sieve into a bowl and add the grated cheese, mayonnaise, chives, chilli, salt and pepper. Spoon the filling into the egg white halves.

Arrange a bed of lettuce on individual serving plates and top with the eggs. Cover and chill until ready to serve.
