Place the sugar, water, and mint leaves in a saucepan and simmer for 5-8 minutes, or until
syrupy. Strain to remove the mint leaves and chill until required.
Cut the top third off the watermelon. Carefully remove the flesh in the melon with a large
spoon, and remove the seeds. Use a melon bailer or cut the flesh into chunks.
Place the watermelon flesh with all the other prepared fruit in a large bowl and pour over the
chilled syrup. Pile the fruit into the watermelon shell and serve.
