Fruit Stuffed Watermelon

Serves: 4
100g / 3 1/2 superfine (caster) sugar
200ml / 7 fl oz water
1 tbsp finely chopped fresh mint leaves
1 medium watermelon
300g / 1/2 pint black and green seedless grapes
3 kiwi fruit, peeled and cubed
400g / 14 oz strawberries, hulled and halved
200g / 7 oz blueberries
1/2 medium pineapple, peeled, cored, and chopped

Place the sugar, water, and mint leaves in a saucepan and simmer for 5-8 minutes, or until syrupy. Strain to remove the mint leaves and chill until required.

Cut the top third off the watermelon. Carefully remove the flesh in the melon with a large spoon, and remove the seeds. Use a melon bailer or cut the flesh into chunks.

Place the watermelon flesh with all the other prepared fruit in a large bowl and pour over the chilled syrup. Pile the fruit into the watermelon shell and serve.
