Fruity Filo Parcels

Makes: 6
3 apples, peeled, cored and chopped
2 tbsp sultanas
1/2 tsp ground nutmeg
1 tbsp maple syrup or honey
6 sheets filo pastry, thawed if frozen
groundnut oil, for brushing
natural yogurt, to serve

Put the apples, sultanas, nutmeg and maple syrup in a small saucepan over a low heat and cook until the apples are soft. Leave to cool.

Preheat the oven to 190ºC / 375ºF / Gas Mark 5. Cut each sheet of filo pastry in half. Brush one half sparingly with a little oil, place another half on top and brush the edges with a little oil. Spoon some of the apple mixture into the middle, pull in the edges and scrunch to close, to form a little pastry bag. Place on a baking sheet. Repeat with the remaining filo pastry sheets and apple mixture to make 6 parcels.

Brush the tops with a little more oil and bake in the preheated oven for 20 minutes until golden. Remove from the oven and leave to cool slightly, then serve with yogurt.
