Fruity Granola and Yogurt Parfait

Serves: 4
500g / 1 lb 2 oz rolled oats
150g / 5 1/2 oz whole almonds, blanched and chopped
60g / 2 1/4 oz walnut pieces
90g / 3 1/4 oz dry unsweetened (desiccated) coconut
225ml / 8 fl oz honey or maple syrup
85g / 3 oz dried berries or fruits
1 peach, pitted (stoned) and chopped
475ml / 16 fl oz plain (natural) or Greek style yogurt
100g / 3 1/2 oz raspberries
100g / 3 1/2 oz blackberries

This recipe will give you more granola than you need - just keep it stored in an airtight container.

Preheat the oven to 350ºF / 180ºC / Gas Mark 4. Place the oats, nuts, and coconut in a large bowl and pour over the honey. Stir until everything is well combined and then spoon onto a non stick baking sheet. Bake for 20 minutes, stirring halfway through. Cool and then stir in the dried berries or fruits.

Divide the chopped peach among 4 serving glasses, spoon over a little granola, and top with the yogurt. Spoon over more granola and top with the fresh berries.
