Fruity Maple Porridge

Serves: 1
175ml / 6 fl oz full-fat milk soya milk, plus extra for serving (optional)
50 g / 1 3/4 oz porridge oats
1 tbsp maple syrup or clear honey
mixed fresh fruit, such as apples, pears, bananas, peaches, mangoes, strawberries and raspberries, prepared and chopped

Mix the milk and oats together in a saucepan and cook over a medium heat, stirring, for 8-10 minutes.

Serve drizzled with the maple syrup and topped with the fresh fruit, with a little more milk if needed.

To make a breakfast brulee, preheat the grill and put the chopped fruit in the bottom of a ramekin. Top with the cooked porridge and a spoonful of brown sugar and place under the grill until the sugar has melted and caramelized. Chill before serving.
