Serves: 2
4 x 175g thick skinless  haddock fillets
12 chopped anchovy-stuffed green olives
75g breadcrumbs
1 tbsp chopped tarragon
1 garlic clove chopped
1 tbsp olive oil

Preheat the oven to 190ÂșC / gas 5. Mix the chopped green olives, breadcrumbs, chopped tarragon, garlic and olive oil.

Wipe the haddock fillets and place on an oiled baking sheet. Place spoonfuls of the olive mix on top of each fillet, pressing the mix down lightly. Bake the fish for 20-25 mins, or until cooked thoroughly. Serve with vegetables.
