Preheat the oven to 190ºC / gas 5. Mix the chopped green olives, breadcrumbs, chopped tarragon,
garlic and olive oil.
Wipe the haddock fillets and place on an oiled baking sheet. Place spoonfuls of the olive mix on
top of each fillet, pressing the mix down lightly. Bake the fish for 20-25 mins, or until cooked
thoroughly. Serve with vegetables.
