Kids Chicken Kebabs

Serves: 4
4 chicken breasts, skinned and cubed
2 tbsp olive oil
2 lemons
1 tbsp fresh thyme leaves
2 zucchini (courgettes), sliced
16 cherry tomatoes
16 white (button) mushrooms, cut in half
1 yellow bell pepper, cut into squares
1 red bell pepper, cut into squares
salt and pepper
orange slices, to garnish (optional)

Place the cubed chicken in a bowl and add the oil, the juice of 1 lemon, and the thyme leaves. Season and mix until the chicken is well coated. Cover and marinate in the refrigerator for 30 minutes.

Preheat the broiler (grill) or barbecue. Lift the chicken out of the marinade and thread the chicken and vegetables onto 8 metal skewers. Make sure you press them well together on the skewer as they will loosen as they cook.

Broil (grill) the kebabs, turning 2 or 3 times, for 10-15 minutes, or until caramelized and cooked through.

Garnish with slices of orange, if liked, and serve each person 2 kebabs.
