Monkfish Stir Fry

Serves: 4
2 tsp sesame oil
450g / 1Ib monkfish steaks, cut into 2.5cm / 1in chunks
1 red onion, thinly sliced
3 cloves garlic, finely chopped
1 tsp grated fresh ginger
225g / 8oz fine tip asparagus
175g / 6oz mushrooms, thinly sliced
2 tbsp soy sauce
1 tbsp lemon juice
lemon wedges, to garnish
cooked noodles, to serve

Heat the oil in a frying pan over a medium high heat. Add the fish, red onion, garlic, ginger, asparagus and mushrooms. Stir-fry for 2-3 minutes.

Stir in the soy sauce and lemon juice and cook for another minute. Remove from the heat and transfer to warmed serving dishes.

Garnish with lemon wedges and serve immediately on a bed of cooked noodles.
