Oatmeal with Apple and Raisins

Serves: 4
100g / 3 1/2 oz dried apple rings, chopped
85g / 3 oz raisins
225ml / 8 fl oz apple juice
1 cinnamon stick
250g / 9 oz rolled oats
1.2 litres / 2 pints milk
2 tbsp honey
2 dessert apples, peeled, cored, and chopped
ground cinnamon, for dusting
plain (natural) yogurt, for serving

Place the chopped dried apple rings and raisins in a bowl. Heat the apple juice in a saucepan and pour over the dried fruits. Add the cinnamon stick and soak for 30 minutes.

Place the oats and milk in a saucepan and heat until simmering. Cook gently for 5-6 minutes, or until thick. Strain the apple and raisins and discard the cinnamon stick.

Stir the dried fruits and half the honey into the oatmeal and divide among 4 bowls. Top with the fresh apple and drizzle with the remaining honey. Serve with yogurt and dust with cinnamon.
