Preheat the oven to 190ºC / fan oven 170ºC / gas mark 5. In a bowl, beat together the eggs,
flour, sugar, milk and vanilla essence.
Cover the bottom of a 20cm / 8 in greased baking dish with the peaches and sprinkle over the
lemon zest. Pour in the batter and bake for 35 minutes, or until the batter is firm.
Dust with some icing sugar and serve warm.
