Heat oil in largefrying pan; cook mince, stirring, about 10 minutes or until browned. Add
pepper, chilli and garlic; cook, stirring, until fragrant. Remove from heat, stir in coriander.
Brush one side of each tortilla with extra oil. Spread pork mixture evenly over half the
tortillas, oiled side down; sprinkle with cheese.Top with remaining tortillas, oiled side up.
Cook tortillas, in batches, in heated sandwich press or frying pan until browned lightly. Cut
quesadillas into quarters; serve with guacamole, if desired.
