Serves: 4-6
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
1 cos (romaine) lettuce, torn into bite-sized pieces
3 ripe tomatoes, each cut into 8 pieces
1 green pepper, cut into bite-sized pieces
1 long cucumber, seeded and chopped
6 radishes, sliced
1 small salad or red onion, thinly sliced
2 tablespoons chopped flat-leaf parsley
2 tablespoons chopped mint

In a bowl, whisk together the olive oil and lemon juice. Season well.

Combine the vegetables and herbs in a serving bowl and toss well. Add the dressing and toss to combine.
