Serrano Ham with Rocket

 Serves: 6
140g / 5oz rocket, separated into leaves
4 1/2 tbsp olive oil
1 1/2 tbsp orange juice salt and pepper
280g / 10oz thinly sliced serrano ham

Place the rocket in a bowl and pour in the olive oil and orange juice. Season to taste with salt and pepper and toss well.

Arrange the slices of ham on individual serving plates, folding it into attractive shapes. Divide the rocket between the plates and serve immediately.
