Spicy Garlic Prawns

Serves: 8
2 kg uncooked medium king prawns
4 cloves garlic, crushed
2 fresh long red chillies, chopped coarsely
3/4 cup olive oil
1/2 cup lemon juice
1 teaspoon sweet paprika
1/2 cup loosely packed fresh flat-leaf parsley
1/2 cup loosely packed fresh coriander leaves
1/4 cup coarsely chopped fresh chives

Preheat oven to low 150ºC / 130ºC (fan-assisted). Shell and devein prawns, leaving tails intact.

Combine garlic, chilli, oil, juice and paprika in shallow 3-litre (12-cup) baking dish.

Add prawns; toss gently to coat prawns in mixture. Cook, covered, about 30 minutes or until prawns are just cooked through; stir once halfway through cooking time. Cover; refrigerate 2 hours.

Serve prawns tossed with herbs.
