Grate the papaya into long, fine shreds with a zester or a knife.
Place the papaya in a large mortar and pestle with the chilli, palm sugar, soy sauce and lime
juice. Lightly pound until combined. Add the fried garlic and shallots, beans and tomatoes. Lightly
pound for a further minute, or until combined. Serve immediately, sprinkled with the peanuts.
