Thai Green Papaya Salad

Serves: 4
500g / 1 lb 2 oz green papaya, peeled and seeded
1-2 small red chillies, thinly sliced
1 tablespoon grated palm sugar
1 tablespoon soy sauce
2 tablespoons lime juice
1 tablespoon fried garlic
1 tablespoon fried shallots
50g / 1 3/4 oz green beans, cut into 1cm / 1/2 inch lengths
8 cherry tomatoes, quartered
2 tablespoons chopped roasted unsalted peanuts

Grate the papaya into long, fine shreds with a zester or a knife.

Place the papaya in a large mortar and pestle with the chilli, palm sugar, soy sauce and lime juice. Lightly pound until combined. Add the fried garlic and shallots, beans and tomatoes. Lightly pound for a further minute, or until combined. Serve immediately, sprinkled with the peanuts.
