Serves: 8-10
1 crisp cucumber, peeled and diced into 3-5mm / 1/8-1/4 in dice
1-2 garlic cloves, crushed
a dash of white wine vinegar or lemon juice
425ml / 3/4 pint Greek yogurt or natural yogurt
4 tbsp cream (optional)
1 heaped tbsp freshly chopped mint
sugar, salt and freshly ground pepper

Put the cucumber dice into a sieve, sprinkle with salt and allow to drain for about 30 minutes. Dry the cucumber on kitchen paper, put into a bowl and mix with the garlic, vinegar (or lemon juice), yogurt and cream.

Stir the mint and taste. It may need seasoning with salt, pepper and little sugar.

Serve as starter, accompanying salad, or as a sauce to serve with grilled fish or meat.
